Thessaloniki- some European flavor in your vacation!

WHERE

Thessaloniki is located on the northern part of the Greek
mainland, in the gulf of Thermaikos which is a major port in
imports and exports. The city was set up in 316 BC and is the
capital of Macedonia and the second big city in Greece after
Athens.

WHY GO

European culture combined with a variety of other cultures from
the north and east, international events such as trade
exhibitions and art displays , local festivals all year round,
business and fun -extensive nightlife-all these blended together
in the unique picturesque setting of Thermaikos gulf in the deep
blue of the Aegean and the extensive historic places of interest
in and out of the city.

WHEN TO GO

The best seasons to visit are spring, when it is sunny and warm
and you can explore the area around the city as well, summer ,
when you can swim at magic sandy beaches within easy reach of
the city, and fall, when international exhibitions take place.
In winter months it is cold -sometimes below zero- but it is
sunny most of the time.

There is a train connection from Europe and the East on a

Getting Around

Local buses run on a daily basis schedule to and from all

Train services are for distant locations only, not for urban
use. However, the metro runs in the city connecting busy to

However, if you want to see everything , you should walk. It's
not difficult to follow a route a day and explore the inner part

BEST MAJOR ATTRACTIONS

The visitor shouldn't miss to see the round White Tower, a
remnant of the ancient walls of the city dated back to 1866,
which is now the characteristic symbol of the city. There are
more towers around the city but they are all square shaped apart
from two of them.

The Triumphal Arc of Galerius is in the middle of the city, an
imposing monument dating back to the third century.

Ayios Dimitrios church, down town, attracts a lot of people,
both tourists and locals. It was built in the 5th century and
has great architectural value. Worth visiting the catacombs dug
under the church which were the hiding place of the first
Christians at that time.

St Sophia church, is also a building you shouldn't miss.

Kalamaria, a popular suburb by the sea.

kinds of tasty dishes, from grilled meat to fish and sea food.

cakes that can be found only in Salonica, as well as homemade
fruit jams.

brilliant colors and sounds of flamenco, and in the birth-place

Maybe you hunger for the peace and quiet of a hideaway hotel in

Even their "caviar" of cured hams - "jamón Ibérico" - has fat
unusually high in oleic acid which is known to lower cholesterol
levels! Now I ask you, where else can you get something
pleasurable, that is cheap, and also good for you?!

Even if you fancy picking between meals you can opt for their
tempting "tapas" - much healthier for you than a packet of
crisps or a donut!

Tapas originate from the large, southerly region of Andalucia
and it is this region that we also have to thank for flamenco
and the Spanish guitar. Which holiday would be complete without
visiting an authentic flamenco show or dancing the night away to
the beat of romantic Spanish music?

So ... come visit this land where the warmth of its climate is
only surpassed by the warmth of its people. You are bound to
have a great time!

Try some great cool-kabobs when the heat intensifies and cooking

chunks, pineapple chunks, small marshmallows, strawberries,
raspberries, peaches, nectarines, blackberries, luncheon-meat
cubes, chicken chunks, avocado slices, cooked and shelledshrimp
in different combinations Serve a fruit dip or marshmallow creme
dip alongside for extra fun. ****************** Hot-kabobs: On
skewers, thread pineaple chunks, green pepper chunks, pickled
onions, mushrooms, ham cubes, shelled and cooked shrimp,
scallops, or hotdogs, cut into 1" chunks ***** Marinated beef or
lamb cunks, ham cubes, turkey or chicken breast pieces, pork
cubes and small precooked potatoes, baby squashes, eggplant
cuts, green peppers, whole mushrooms, quartered tomatoes, chunks
of cucumber, pineapple chunks, green banana chunks *****
Marinated Beef: 1/2 cup salad oil, 3/4 cup vinegar, 3/4 cup
chopped onion, 1 tsp. each salt and pepper, 2 tsp.
Worcestershire sauce, 2 lbs. lean beef round cut into 1-1/2"
chunks Let cubes of meat stand in marinade in refrigerator
overnight. ***** Wrap frankfurter cuts in partially cooked
bacon, and skewer with Bologna slice chunks, and dill pickle
chunks Grill and enjoy! ***** Marinate cubes of sharp cheddar
cheese in wine (Burgundy). Leave in refrigerator overnight.
Drain well, skewer, and serve with crackers ***** On a pretzel
stick, string 1 sweet gherkin with 1 cube cheese and a slice of
hard salami Skewer a whole mushroom with a ham chunk and a piece
of Swiss cheese. ***** Lobster tails, fresh peeled shrimp, fresh
scallops, cherry tomatoes, giant-size olives, butter sauce,
tartar sauce Partially cook lobster tails in boiling water. Snip
shells open and remove meat. Lace lobster meat, shrimp,
scallops,tomatoes, and olives onto skewers. If using wooden,
soak skewers in cold water before using. Brush seafood with
lemon butter (1 part lemon to 2 parts melted butter). Grill
until fish is done and tender. Brush additional butter sauce if
desired. Serve sprinkled with finely chopped parsley. ***** 4
lbs. spareribs, cut in narrow strips 1 cup Fresh dressing 1/2
cup finely minced onion 1/2 cup chili sauce 2 tbs. light brown
sugar 2-1/2 tbs. lemon juice 2 tbs. Worcestershire sauce
quarters of white onions Rub rib meat with salt and pepper.
Place in shallow pan. Combine dressing, onion, chili sauce,
brown sugar, lemon juice, and Worcestershire in bowl. Pour over
rib meat. Let stand in refrigerator overnight. Drain, but
reserve some marinade. Skewer rib meat with onions. Brush with
marinade and grill. Serve with potato salad, and lemonade.

We know that our bodies require calcium and vitamin D in order
to build and maintain powerful bones. According to his recent
book entitled, "Preventing and Reversing Osteoporosis," by Dr.
Alan Gaby, it takes more vitamins than we think to prevent
brittle bones including Vitamins K and B; as well as minerals
such as magnesium, phosphorus, fluorine, silica and boron.

The idea is to provide enough combined supplementation for our
bodies to make an abundance of healthy collagen which is the
connective tissue used to create cartilage and bones. Collagen
also 'binds' our cells together and as a result, someone with
good collagen has healthy looking skin whereas another will have
thin and wrinkled skin.

A healthy bone cut in half looks similar to a sponge. The body
deposits calcium, phosphorus and other minerals onto all of
those connective fibers and you get healthy bones! The holes
give the bone its flexibility, and you won't have healthy bones
if you don't have plenty of collagen on which to deposit the
minerals.

Collagen is primarily a protein which is made from amino acids.
Our bodies can create some of our requirements but we also need
additional amounts from our foods and supplements including
lysine and praline. Vitamin C is also required to create
collagen.

Now we know how bones can be made stronger, but how is this
process affected by menopause? The loss of estrogen due to
menopause or possibly surgical removal of the ovaries can
accelerate bone loss for a period of up to 8 years. It is well
established that replacing that estrogen helps protect against
the risk of osteoporosis.

More often, women's bones become fragile as we age and it's not
uncommon to break bones in the wrist, spine and hip due to
osteoporosis. Unfortunately, a fracture such as in the hip, can
even shorten our life span so it is important to pay attention
to our bone health.

What should be done to prevent osteoporosis from happening after
menopause?

First of all, eat the foods that are calcium-rich (about 1,000
mg per day) and can enhance bone growth including: sardines,
salmon, seafood, and green leafy vegetables such as swiss chard,
beet tops, kale, mustard greens, collards, spinach, dandelion
greens, watercress, parsley, chicory, turnip greens, broccoli
leaves, almonds, asparagus, blackstrap molasses, broccoli,
cabbage, carob, figs, filberts, oats, prunes, sesame seeds, tofu
and other soy products.

Vitamin D-rich foods include fish oils such as found in salmon,
mackerel, sardines), eggs (including the yolks), sweet potatoes,
tuna, vegetable oils and cod liver oil. Getting 15-20 minutes of
sunlight exposure daily can also boost production of vitamin D.

Exercise is crucial; in particular, you need weight-bearing
exercise such as walking, Tai chi, dancing and weight training
to reduce the chances of brittle bones at least two times a
week. Include 15 to 60 minutes of aerobic activity two to three
times a week. Avoid high-impact activities and include
stretching exercises.

Finally, use high-quality supplements prescribed by your doctor
or health-care provider, and oh yeah, don't forget to have fun.

Title: Some words about anti-aging and disease prevention

The aging process is for the greater part no mystery anymore. It
consists for a great part of daily damages done on the
macroscopic, tissue, cellular and genetic levels. These add up
as the years are passing. These damages have specific causes
like oxidating agents, sun beams, mechanical wear and tear,
psychological stress, lack of some nutritional components and
too much of others, like fat.

Another component of aging is the reduction of the telomere
chains at the chromosome ends, as each cell division occurs.
However, the body has means to repair these ends again, with an
enzyme called telomerase. The rapidity of the aging process
depends on lack of efficiency in this repair process. The above
mention aging causes also slow down this repair process.

The factors causing aging, also causes other diseases like
cancer and coronary heart disease. Both aging and these diseases
can in great extend be prevented with the knowledge possessed
today, and the damages can in great extend be reversed. The
components to achieve this are:

-Adequate dayly food containing whole cereals, peas, beans,
vegetables, fruit, fish, mushroms, fouls and seafood, and with
just a moderate amount of red meat.

-Just a moderate amount of fat and most of the fat supply
comming from sources like olive, fish, nuts, sun-flower, etc.
Then you will get a good balance between mono-unsaturated fat
(olive), poly-unsaturated fat of the omaga-3-type (fish) and
poly-unsaturated fat of the omega-6-type.

-Just a very moderate amount of butter, soya oil, corn oil and
palm oil. A high consumption of these fat sources gives you too
much saturated fat and poly-unsaturated omega-6-fat. -Just a
very moderate amount of sugar, refined flour or refined cereals.

-Supplements of specific nutritional components like vitamins,
minerals, lecitin and some essential fatty acids.

-Adequate training, that both gives both a muscular load, work
up your condition and stretches out your body. To stretch out,
yoga-exercizes are ideal.

-Adequate rest and stress-reduction. Daily meditation is a

When it comes to entertaining, everyone is always on the lookout
for new ideas and variations on old favorites. We are all pretty
familiar with "potluck" dinners at church socials, or family
reunions.

One variation on this concept is a "Participate and Enjoy"
party. A menu is created by the host/hostess. The recipes are
typed out and given to the participating guests. This is usually
done about two weeks before the event date. Each person has an
assigned part of the menu, as well as the recipe to use.
Sometimes they can be traditional, stand-by recipes or it can
even be more fun with "new", never tried, and just found in your
favorite magazine type of party. This also gives you the
advantage to test these recipes or better yet to taste them
without all the work.

Your Participate and Enjoy party will be the full-course
variety. Someone will make the punch, the appetizers, salad, hot
bread, vegetables, main course, dessert, and beverages. If you
invite more guests, then your snack food, fruit, or pasta
courses can be included. It is a fun way to have a party, a
great way to taste new recipes, and a lot of fun for those
participating because no one really knows the outcome.

Also, a nice side note is to have the recipes typed out in a
small "memory" booklet featuring each recipe used, who made, and
a space for thoughts and comments. Whenever anyone rereads their
"take home" gift, they not only have great recipes, but a lot of
fun remembering this special kind of party. Here are a few
recipes to get you started: *****

SEAFOOD DELIGHT 1 8-oz. carton dairy sour cream 1/2 cup
mayonnaise

1 tbs. parsley, finely chopped 1 tsp. lemon juice 1 tsp.
Worcestershire sauce 1/2 tsp. white onion, finely chopped 1 pkg.
imitation crab meat

1 pkg. salad shrimp

Dippers: celery sticks, green onions, green/red pepper strips,
cauliflower, broccoli, cherry tomatoes, torn pieces of rye
bread, butter-flavored crackers

In a bowl, blend the sour cream, mayonnaise, parsley, lemon
juice, Worcestershire and onion.

Flake apart the crab meat into small pieces. Rinse and dry the
salad shrimp. Stir the crab meat and shrimp into the dressing
mixture. Chill for about 2 hrs. Serve on a plate surrounded with
your choice of vegetable dippers or crackers. *****

STRING BEAN MEDLEY>br> 1/2 lb. hickory or maple-flavored bacon,
diced 2 lbs. fresh picked young green beans, washed, trimmed,
but left whole 4 red-skinned new potatoes, unpeeled, and cut
into small cubes

1 large onion, sliced thinly 1/2 tsp. salt

1/4 tsp. fresh ground black pepper 1 tbs. fresh summer savory or
1/2 tsp. dried 1-12 cups chicken stock, preferably home-made but
canned will do 1/4 cup chopped parsley

In pot, over medium-high heat, brown the bacon until crisp.
Drain on paper towels. Pour off fat from pot, as much as
possible. Add the green beans, potatoes, onion, salt, pepper,
savory and chicken stock. Stir gently. Simmer 25 mins. or until
potatoes are tender and beans are crisp-tender. Before serving,
sprinkle with chopped parsley and add a lemon twist for color.

Assorted Sandwich Tray- Using rolls, bread (white, wheat, nut,
raisin, rye, or specialty), pita, or French bread- *

Chopped chicken, raisins, mayonnaise Roast beef, sliced onions,
anchovy fillets, mustard Peanut butter, crisp bacon

Mashed sardines, dry mustard, hard-cooked egg, sweet pickle
relish Avocado, chopped onion, lemon juice, salt, pepper, crisp
bacon

Sliced American cheese, boiled ham, mustard

Chopped frankfurters, dry mustard, sweet pickle relish, salad
dressing Sliced turkey, tomato, bacon, lettuce

Or a combination that you have never tried before *****

ORANGE CREAM 2 pkgs. (3 ozs.) orange flavored gelatin>br? 1-1/2
cups boiling water

2 cans (11 ozs.) mandarin oranges, drained

1 can (8 ozs.) crushed pineapple in juice, undrained

1 can (6 ozs.) frozen orange juice concentrate, thawed

Topping:

1 pkg. (8 ozs.) cream cheese, at room temperature 1 cup whole
milk

1 pkg. (3 ozs.) instant vanilla pudding instant In bowl,
dissolve the orange gelatin in the boiling water. Stir to
complete dissolve. Add the fruit and the orange juice. Do not
dilute the orange juice with water, just take it directly from
the can.

Coat a pan with non-stick spray. Do not use butter or
shortening. Add the gelatin mixture. Refrigerate until firm.

In a bowl., beat the cream cheese in a mixer until very light.
Slowly add the whole milk and the pudding. Continue blending
until smooth with no lumps. Spread over the fruit layer. Chill
until firm.

Whatever your choice of dishes, you can have a lot of fun with
friends and family. In fact, this party theme can be used for
picnics and outdoor cooking. Have someone bring kabobs, another
stuffed hamburger patties. Ice cold salads, and smooth, tasty
desserts will round out the menu.

Everyone feels they have contributed to the party, they take
home a great gift they use over and over again, and you will
have had the opportunity to try a dozen different recipes, while
only preparing one. Not a bad compromise! ENJOY

homemade card for your first girlfriend or boy friend and they
were so happy they couldn't stop smiling? You couldn't figure
out what you did that was so great but as you got older you
began to realize that giving is best when we give not just
'things', but when we give of ourselves. Valentine's Day is a
perfect holiday to give to others by doing something special.

Even though you may not spend much time cooking in the kitchen,
wouldn't you like to treat your love to an easy, delectable and
romantic dinner? A special meal is not just about food- it is
about the effort and meaning that goes into it. These ideas will
make it easy for you to create a memorable meal for Valentine's
Day, or any other time when you want to show someone your love.

Make it Easy on Yourself

o What kind of meal you want- brunch or dinner? Write down your
menu and all ingredients from your recipes you'll need in an
organized way. List the stores you need to shop at.

o What do you want to serve? Keep it simple - have 3 or 4 items,
and not everything has to be homemade. Cook an easy recipe. Get
a great dessert -go out and buy the most decadent chocolate cake
you can find, or find fresh strawberries dipped in chocolate
from your local candy store.

o Choose food that your partner likes, not just what you like.
This shows that you have put a lot of thought in to this and
care, which is the point, right?

o Be sure to start several days in advance. If you save
everything for the day of the celebration, you'll be frazzled
and in not much of a mood to enjoy this time together.

Remember that this is about Love, not Technique.

o As with other activities associated with love, cooking does
not have to be totally perfect. If something does not come out
in time, or if it doesn't look exactly like the picture in the
cookbook, relax. Stay in the mood you set out to create- being
grumpy or upset defeats the purpose. Laugh and have fun!

It's the Total Feeling - Ambiance Counts

o Setting your table is important in creating the mood you want
to set, which is romance. Use your nicest dishes, silverware and
the best, sparkling glasses or crystal you can get.

o Choose a color scheme. You may want to use a white tablecloth
and add color with the napkins and candles, or two beautiful
place mats with matching or contrasting colors. For example, red
or soft pink on a white background, with a small container of
white flowers and lots of red votive candles looks beautiful.

o Turn off the cell phone! Keep music soft and tender, but not
so slow that it makes you want to fall asleep.

Just Show That You Care

o Show your genuine love in what you say and do. That is what
will come across as caring. The fact that you took the time to
make this event happen, that you cooked a few things, mostly
from scratch, will help this to be a beautiful memory for both
of you!

&#9829;REMEMBER OTHERS WHO MAY BE ALONE &#9829;

This holiday is really geared to couples - and I want to suggest
that you also included others- reach out for someone who may be
alone. An elderly neighbor, or someone who has been recently
widowed or divorced, someone who is ill and can surely use a
lift. It is amazing how a call, a card, a little plant such as a
yellow primrose , a pink or red cyclamen, or forced-bulb
lavender hyacinth or tulip, will make everyone feel a little
better! Most of these treats are under $5.00, but think of the
joy that someone will get by this unexpected gesture of love.

AND REMEMBER THE KIDS...

Not just with candy but also with a hand-written card, a lunch
out together, making a Valentine's craft such as construction
paper and doily hearts to put in the windows, making cupcakes
and decorating with all those yummy red candies and icing. Make
some time to do this now because they are out on their own all
too quickly. _______________________________________

Title: Spanish Food - The Perfect Paella

Looking for a traditional Spanish recipe? Without doubt, the
best-known is going to be the prodigious paella ... that tasty,
adaptable, gregarious dish famed throughout Spain and the World.

And, what an impressive choice of recipes exist for a
pleasurable paella: seafood, chicken, rabbit ... or a mixture of
all three! Perhaps you are non-meat eating ... well, just opt
for one of the several vegetarian paella recipes. Bit of a
health fanatic? Then substitute white rice for whole-grain rice
or wild rice.

Got a large family and not much money to feed them on? Use
plenty of rice and imagination along with a tasty stock, plus
whatever you can find in the cupboard! I have certainly enjoyed
many paellas where there have been more bones/shells than meat/
seafood! And, very tasty they have been too, the richness of the
company more than compensating for any paucity in the
ingrediants.

So ... how do you go about making the perfect paella? First of
all, you need to choose your rice. The short-grained rice from
Valencia - where most Spanish rice originates - is fine for
making paellas. However, the "bomba" rice grown in the
neighboring region of Murcia, is the "king" of paella rice:
again, short-grained, it has the ability to absorb the stock
whilst remaining firm.

Another "must" is to use saffron ("azafrán") to create the
gentle, yellow color for which this delectable dish is renowned.
Yes, it is possible to buy cheaper, artificial colorings but ...
go for the traditional - it will bestow a wonderful aroma and
unique flavor.

Many Spaniards swear a perfect paella can only be achieved when
using a tasty, home-made stock. Whatever you decide, allow at
least double the amount of liquid to rice. If, during cooking,
the dish becomes a little dry, just add a dash more water or
stock.

Another tip I have been told, on more than one occasion, is to
gently fry the rice for a few minutes before adding the stock,
ensuring that it is well-coated in oil. I think all Spaniards
would agree that, once cooked, it is best to leave your paella
to stand for a good five minutes before serving.

Perhaps the most important ingrediant for making that perfect
paella, is to use lashings and lashings of love whilst preparing
it - for surely, that is something we can all afford - and to
enjoy to the full the marvellous company of those who will share
it with you.

I shall now have to choose a paella recipe to offer you as an
example! I think I will opt for a seafood paella, typical of the
region of Valencia, where I live. The ingrediants are for a
hearty four servings. If you are not a hefty eater, or on a
diet, then reduce the amount of rice/stock slightly.

Paella Valenciana - Paella From Valencia

Ingrediants:

- 4 cups rice. - 8 cups fish stock. - 8 king-sized
prawns/langoustines. - 8 mussels. - 200 gr shrimps. - 200 gr
peas (fresh or frozen). - 2 tomatoes, skinned and chopped. - 2
cloves garlic, thinly sliced. - 3 strands saffron, crumbled. -
Olive oil for frying.

Method:

1. Sauté garlic in a paella-type pan.

2. Add tomatoes, peas, shrimps and saffron.

3. Cook for a few minutes.

4. Add rice and stock.

5. Simmer for approximately 20 minutes.

6. Decorate with prawns and mussels.

7. Cover paella with a lid.

8. Poach the seafood for a few minutes.

9. Decorate paella with lemon quarters.

10. Enjoy!

lately has become very popular. Entries in this field include
ribs, roasts, steaks, and even some dried and cured meats.

8. Poultry - There are any number of gourmet foods prepared with
chicken, but duck and turkey is also top favorites for special
dishes.

So where can you use gourmet foods? Almost any special occasion
is a good time to include gourmet foods, drinks, or desserts on
the menu. Everything from intimate dinners for two to large
social gatherings are all acceptable places to include the
delicious taste of gourmet foods to help make that occasion
truly special and unforgettable.
